Watching on 402 - if VAR had been used would Chelsea’s first goal Morata have been offside?

It's an irrelevant question. It's like asking whether in 1987 if the modern back pass rule had been in force, would Neenan have given away a free kick. Under the laws as applied in 2017, Morata was onside because he was level; under the new rules (where there is no level in VAR matches), he may have been offside, but the new rules didn't apply.

Is it irrelevant in this day and age? Lots and lots of historical acts are now being judged on today’s laws and morals. How long before some sado demands previous “wrong” results are rectified.
