I use ExpressVPN, currently signed in now in New York, trying to sort out NBC Sports to watch the Arsenal game this afternoon.
Never had any issues with it and works perfectly. I use to travel abroad a lot for work and used it on my phone to access SkyGo and Bet365.

I’m in Lanzarote now. In Playa Blanca, will try one of the bars like Irish Anvil to see if the Arsenal game is on. If not I’ll stream off hesgoal. One thing to note is that the hotel and bars wifi block streaming services now. I’m still able to use my local plan allowance whilst roaming in Europe, but it’s a fair use policy capped at 12GB. Worth checking with your service provider what the current rules are. No worries for hesgoal as the stream is lightweight, but if you’re looking to stream Netflix all week I’d suggest downloading as much as possible at home. Thanks all, and thanks CW. We’ll be staying in a villa in Playa Blanca as well and just had “permission” to find a bar to watch the Watford match so happy days all round!

Irish Anvil showing the game today. No reason why all the sports bars won’t have ours on against Watford. Foreign broadcasters paid billions for Prem League. If you’re to the East of Playa Blanca then there’s 3 sports bars in the complex with Burger King in it. To the West then there’s the Irish Anvil, Popeye’s, Suzanne’s Sports Bar, Natura Beach and one by the Rubicon Palace on the promenade. Irish Anvil is big, outside and inside TV’s, €3 for a pint of San Mig. All 3 games on today.

I use surfshark but for some reason it doesn't work on the skysports webpage. Works everywhere else on everything else

Windscribe works fine and you can get 10gb free each month if you sign up to their newsletter. Might be plenty if you're not a heavy user.
Avoid paying normal prices for VPNs. They always have referral promotions so you get ripped off buying without some special deal.
Some like Express VPN are very expensive and not worth the cost imo. I'm sure they're a little more reliable but reconnecting to a different server if you have an issue doesn't take long. Some people will pay the extra to try and avoid all the buffering they can though.
I'm using wevpn at the moment and it works fine. Before then used windscribe and it also worked fine but these are watching games from the US market.
A side tip: if you can use a credit card to buy a Canadian DAZN subscription or find someone selling a shared account you can watch all the premier league games by connecting to a Canadian VPN. Much, much cheaper than Sky.

Re. watching sky etc abroad - last summer I bought a mobile wireless router for my family’s holiday property in Spain. I got an Asda Mobile SIM card and whenever I go I pay about £25 for a month of unlimited data. It means I can connect all mobile devices etc to the wireless and I can also use my firestick for IPTV etc.
What surprised me was that because it was a UK SIM card I was able to access BBC iPlayer which was a bonus. Not sure how you plan to stream the game, but could be worth looking into getting a SIM card to use whilst you’re there.
